Hi friends – another cheap and easy vegan meal for you guys! You don’t need deli meat to feel satisfied or get your protein in. Deli meat is gross. Trust me.
Instead, I like to mash up beans to make kick-ass, protein-packed, satisfying sandwiches. My favorite ever is this white bean salad sandwich, but this is an alternative for me so I don’t get bored. Switching things up keeps it interesting.
Black beans are cheap cheap cheap. Bread, frozen corn, hummus, lettuce… these are things you most likely already have in your pantry, to be honest. You don’t even need the red pepper (I’ve made it plenty of times without, and it is just as delicious). You also don’t need the mayo, but I had it on hand and prefer the creamy consistency. But you could totally do without and just use the hummus in the black bean mix, too. Anything goes.
Recipe
You will need:
- 1/2 cup black beans
1/4 cup corn - 1 tbs vegan mayo
- 1/2 tsp smoked paprika
- Dash of salt and pepper (to taste)
- Bread of your choice
- Hummus of your choice
- 2 lettuce leaves
- 1/2 red pepper, sliced
To make:
- In a small bowl, mash black beans with a fork until almost smooth (I left a few chunks). Add corn, mayo, smoked paprika, salt, and pepper. Blend until combined.
- Toast bread of your choice and spread black bean mix on one piece, and hummus on the other. Top off with lettuce and red pepper. Make sandwich and slice. Enjoy!
