10 Easy Vegan Lunch Meals for Beginners

As promised, here’s part two of my easy vegan meals for beginners series. Last time, I shared 10 breakfast ideas, so if you are interested in seeing those, you can find them here.

Lunch is my favorite as a vegan – there are so many quick and easy plant-based options – from sandwiches, soups, salads, and more. I’m very much a sandwich or burrito person, so this is my jam. If you are just starting out as a plant-based eater… whether vegetarian, vegan, or just trying to cut back, I hope some of these ideas look interesting to try.


#1: White Bean Salad Sandwich

To kick off the list, my personal favorite. This creamy white bean salad is the perfect substitute if you used to enjoy chicken or tuna salad.

#2: Mac Salad

This is my favorite, especially in the summer. Mac salad is so easy to make. If you need a recommendation for vegan mayo, my favorite is Just Mayo. BUT, there are so many. Trader Joe’s has a great one and also Vegannaise.

#3: Spinach Salad

You can always turn to a simple salad. Use up whatever veggies you have in your house and add proteins, too. Some of my favorite additions: roasted tempeh, baked tofu, walnuts, pumpkin seeds.

#4: Tofurky Sandwich

Give mock meat a try. Tofurky is my favorite brand, especially the smoked tofurky. It is a great protein boost and once you add the lettuce, tomato, mustard/mayo, pickles… you won’t even taste the difference.

#5: Veggie or Bean Burger

The above is a sweet potato burger (from Whole Foods) with vegan mozz, avocado, and lettuce. Grab your favorite veggie or bean burger from the freezer and load up with toppings.

#6: Burrito Bowl

This takes a little extra effort, but totally worth it. Vegan crunch wrap supreme, baby.

#10: Summer Rolls

Rice wraps are awesome. It takes a couple tries to get the hang of rolling them up, but once you do… the combinations are endless. My favorites are mango and avocado rolls and these rainbow rolls.
